I love broccoli. I love it steamed, sauteed, stir-fried, roasted, and even raw. But my absolute favorite way to eat it is right off the grill. I grill pretty much anything I can, especially veggies. Broccoli is great because it holds together well and doesn’t fall through the grate. I add a secret ingredient to my broccoli and once you try it you may never cook it the same way again.
You’ll want to start by rinsing your fresh broccoli, and cutting about an inch off the bottom. Then just slice each head right down the middle of the stalk.
Next you’re going to need to brush your broccoli with oil before you throw it on the grill. You can use pretty much any cooking oil, but my secret ingredient is what makes it taste so good.
Bacon fat, you guys. Melt a couple of tablespoons of bacon fat and slather your broccoli with it. You can add some garlic powder if you’re adventurous, but honestly it needs nothing else.
Throw it on the grill on medium heat with the lid closed for about 7 to 10 minutes per side. My technique is to cook my meat first, and when it’s almost done I move it to the cooler side of the grill to keep it warm and throw the broccoli on.
Season your beautiful broccoli with a little salt and pepper and serve immediately. It tastes the best when it’s hot.
