I had a little head start this year on my “getting healthy” resolution. I started my Keto journey back in September, and although I have had a couple of hiccups over the past few months, I’ve been seeing great results. One of my favorite things to do is “ketofy” the foods I love the most. Sometimes I have to replace most of the ingredients with keto-friendly options like in my Keto Mini Everything Bagel recipe, and other times it’s as easy as replacing the sugar with a better-for-you sweetener option and upping the fat a little bit to meet my macros.
Such is the case with this deliciously creamy Italian dressing that I created to go with one of my favorite salads – antipasto salad.
When you think of salad dressing you don’t think about carbs, but oftentimes there are more in there than you’d expect. Store bought dressing, whether it’s creamy or a vinaigrette, most likely contains a small amount of sugar. Just one Tablespoon of table sugar has over 12g of carbohydrates. So, the most obvious way to cut down on the carb count is to find a great sweetener product that you love.
I’ve been using Truvia Spoonable – a blend of Erythritol and Stevia Leaf Extract – for a little while now. It’s calorie-free and adds the perfect amount of sweetness to my food and drinks. I love the option of a small jar of sweetener, rather than individual packets for at home. Naturally, it was the perfect addition to my dressing recipe.
Sure, you could skip the sweetener all together and still end up with an edible dressing. However, when you’ve got tangy, spicy, and herby ingredients all mixed together in a salad, a little bit of sweet will take your flavors to another level.
Antipasto means “before the meal” in Italian. It’s traditionally made with cured meats, various cheeses, and marinated veggies such as artichokes, olives, peppers, mushrooms, and peperoncini. There is no exact list of ingredients, so you can customize the ingredients to fit your tastes, and it’s as easy as chopping up some meat and cheese and throwing it together with your veggies. It can be served as a salad with lettuce, or as a simple meat, cheese and accompaniment plate. Of course for the salad option, a great dressing is a must.
To make this dressing keto-friendly, you’ll need a mayonnaise that doesn’t have a bunch of sugar. There are a couple of brands available, or you can make your own. To that you’ll add a tiny bit of onion and minced garlic, salt, and pepper.
I like to pulse those together first before adding in the oil, vinegars, and Truvia Spoonable. Then, I blend everything until it’s nice and smooth, using my immersion blender. You could also do this in a blender or food processor.
Once everything is nice and blended, you want to just pulse in your fresh basil and oregano. I give it a rough chop first, and then scoop up a heaping Tablespoon of each. If you blend it too much it will turn your dressing green, so just a couple of quick pulses and you’re good. You can use dried herbs (use a teaspoon of each instead) but I promise that it’s so worth it to use fresh herbs. It’s always worth it!
The hardest part of making this dressing is waiting to eat it. You can eat it right away, but it will taste much much better if you let it sit in the fridge for about an hour.
Use your hour to put together the most epic cheesy antipasto salad you’ve ever had.

A generous sprinkling of Shaved Parmesan, Romano, and Asiago cheeses will take care of that.
