  1. First, mix together the chia seeds and water. Set aside.
  2. In a medium bowl, stir together the oat flour, baking powder, cinnamon, and salt. Set aside.
  3. In a mixing bowl, mix together the applesauce, egg, oil, sugar, vanilla and chia seed mixture. Mix on high just until everything is combined.
  4. Add in the dry ingredients and mix well. The batter will be slightly thick.
  5. Divide evenly into a well-greased cupcake pan (or use liners) and bake at 375* for 20 minutes, or until a toothpick comes out clean. Do not cook too long! Remove from the oven and let cool.
Frosting
  1. In a small microwave-safe bowl, heat the cream cheese for 15 seconds at a time until it is soft enough to stir.
  2. Mix in the milk and stir until smooth.
  3. Add in the two packets of Emergen-C and mix well! The frosting will expand and get super fluffy.
  4. Dip cooled muffins into the frosting and enjoy!
