Let’s talk about S’mores. They are my favorite dessert in the history of all desserts. To me, nothing beats the combo of graham crackers, marshmallows, and chocolate. (And I’m sorry, but it has to be Hershey’s Milk Chocolate. Nothing else will do.) While classic s’mores have a special place in my heart, I also have room in my heart – and stomach – for pretty much any s’mores-inspired dessert. S’mores cake? Yes please! S’mores brownies? Be still my heart. S’mores cookies? I’ll take two! But I wanted to do something a little different for our most recent family BBQ. An easy weeknight dessert. And so, S’mores Parfaits were born.
Doesn’t that look delicious? I think so too, but sadly I am not the one who got to eat it. I’m hardcore dieting before my 30th birthday rolls around, so no sweets for me. Luckily the rest of my family gets to eat desserts, and so I had a lot of taste testers to help me with this recipe.
I grabbed my basic S’mores ingredients: Honey Maid Graham Cracker Squares, A 6-pack of Hershey’s Milk Chocolate Bars, and some Jet-Puffed Marshmallows. You’ll need mini marshmallows for the parfait, but I also grabbed some really cool Jet-Puffed Stacker Mallows that are perfect for making classic s’mores with the left over chocolate and grahams. The other ingredients you’ll need is a large box of Jell-O pudding, and a jar of Marshmallow Creme. I went with vanilla pudding, but I’m thinking that white chocolate would have been really tasty too.
I didn’t have to go very far into my Walmart to find what I needed. They knew I had S’mores on the brain and there was a display right in the front.
Anyway, let’s get this recipe started. If you’ve ever made pudding, you know that it involves whisking or beating for 5 minutes. I’m too lazy for that so I’m going to show you how to do it my way.
Add pudding package to blender, add milk to blender, blend on the highest setting for 5 minutes.
While that’s blending, try your best to measure out 2 cups of Marshmallow Creme. It’s not going to be pretty, and you’ll probably get it all over your hands. That’s okay. Just dump in the blender and put it back on high for another minute. (We’re at 6 minutes now.)
Here’s my favorite part. Gather your s’mores ingredients and your jars or cups or whatever you’re putting your parfaits in.
Crumble a couple of the graham cracker squares into the bottom of the container. For appearance purposes, it looks nicest if you push the crumbs toward the sides of the container. (Don’t get too fancy, we only have 4 minutes left!)
Pour your pudding mix into the center of the container, covering all of the crumbs, and filling it about halfway.
Top with a couple of pieces of crumbled up chocolate and more graham cracker pieces.
Add some more pudding, leaving room for the most important part of all…
Top it off generously with mini marshmallows, more chocolate pieces and some graham cracker pieces. That should use up the last minute, and you’re done! All that’s left to do is eat it. A perfect ending to a Summer get-together.
