Recently I started a new healthy-living journey. I was feeling constantly sick, tired, run down and just overall out of shape. A friend turned me on to the Ketogenic Diet, specifically the Low Carb High Fat diet. I read a great book she recommended, and I was ready to make some major changes in my lifestyle. I visited my doctor to get the green light, and got some blood work done so I’d have a base line to compare to later. I’ve been on the Ketogenic Diet for almost a month now and I have lost a good amount of weight, I’ve had tons of energy, and I’m not feeling sick all of the time. So far, it’s working for me.
One of my favorite meals to eat on the Ketogenic Diet is breakfast. Probably because it’s my most significant meal of the day. What I eat for breakfast has to keep me going for hours, so I have to make sure I have a good amount of healthy fats and protein, and not a lot of carbs, which tend to slow me down. While there are a lot of great ways to get protein, I love the option of adding protein powder to my recipes. You get a great protein boost without having to add a whole bunch of ingredients. I picked up some Vega Essentials Shake from Target recently and decided to use it to make some pancakes. I haven’t had pancakes since before I started on the Ketogenic Diet, and with only 4g of carbs in a scoop, I knew I could totally work it into my diet!
Start by gathering your ingredients. I was so excited to find the Vega Essentials Shake at my Target, because not only does it pack a whopping 20g of protein in one scoop, but it also includes three servings of greens, 25% daily intake of food-based vitamins and minerals, plus fiber and Omega-3s as well! Because I’m so busy all day, it’s so nice to be able to get a good amount of my daily nutritional needs into one quick and easy meal.
What you’ll need: 1 scoop of Vega Essentials Vanilla Shake, One Egg, 1/4 cup of unsweetened coconut milk (or heavy whipping cream if you can have dairy), 1/3 cup of water, 1/2 teaspoon of baking powder, and a pinch of salt.
Add the protein powder, baking powder and salt first.
Add your egg…
And last, add your coconut milk (or heavy cream) and your water.
Whisk it all together while your griddle or pan is heating up. I recommend letting it rest for 5 to 10 minutes before cooking so the baking powder can do its magic and fluff your pancakes up.
Use a 1/4 cup scoop to portion your batter out.
Make sure you give your pancakes plenty of time to cook. They should get really bubbly before you flip them. If you do it too soon they might fall apart, so be patient.
Patience equals fluffy little pancakes!
For a little extra fat, you need a lot on the Ketogenic Diet, add a generous pad of butter to the top of your pancakes. The butter also adds amazing flavor, and I love them just like that. If you have a favorite low carb pancake syrup, you can use that to top these delicious pancakes as well.
