Happy New Year! Yes, I know January is almost over, but after we got back from our Epic Road Trip to the other side of the country and back, I promptly got really sick. I’m just now emerging from the depths of my dark bedroom, and I’m ready to kick butt this year!

They taste great, but sometimes it’s nice to change things up a little bit. I came up with three great low carb snacks that use one string cheese each. Perfectly portioned, and tasty! And if you really wanted to, you could make extras for great, healthy party appetizers.
They don’t take too long to make. It’s as easy as opening a package of Weight Watchers Light String Cheese! I started with one of my favorite flavor combos ever, tomatoes and basil.
For these Caprese String Cheese Bites, just cut one string cheese into eight pieces. Push a small piece of basil, and a cherry tomato onto a toothpick, then add one piece of the string cheese. If you want to get fancy you can drizzle it with balsamic vinegar. Yum!
They are so good, and you can eat the whole plate without any guilt at all.
The Red Pepper and Olive String Cheese Bites are another simple but oh-so-yummy option. Again, just cut the string cheese into eight pieces. Stick a small piece of roasted red pepper and a black olive onto the toothpick and then add one piece of the string cheese. (Another delicious option would be a garlic-stuffed green olive with pimento on top!)
Last but not least, I had to get some meat in there.
I used Sopressata, but salami, prosciutto, or even ham would be good too! Cut your piece of string cheese into two piece lengthwise, and then cut those two piece crosswise, giving you four pieces. Fold up a slice of meat, wrap around a piece of cheese, and then stick it with a toothpick. Repeat three more times and enjoy!
