Growing up my mom always made this dish, which she calls Tarragon Chicken, but I think in actuality it’s a hybrid of Tarragon Chicken and Chicken Cordon Bleu. Regardless, it’s delicious, and relatively simple. She takes chicken breasts, seasons them and bakes them. Then, right before serving, they’re topped with a slice of ham and a slice of provolone cheese and baked until the cheese is nice and melted. The dish is usually served over rice, with a heaping spoonful of a creamy tarragon sauce. While the chicken itself is pretty low-carb diet friendly, the rest of the meal really isn’t.
I’m a huge proponent of making meals out of what you already have handy, and on this particular evening I had some really nice ground chicken handy. I decided to experiment with a Tarragon Chicken Meatball recipe. What resulted was pretty delicious.

We love a good movie night in this house! There’s no better reason to snuggle up together on the big comfy couch with lots of blankets and snacks. I love putting together a whole spread of themed snacks to choose from, but I try to have something substantial for us to eat, so that it’s not just a bunch of junk before bed time.
I tried to get a little creative. We watched Minions movie in theaters first, and I just loved the character Herb Overkill, played by the lovely Jon Hamm. We grabbed the Minions Metalpak Blu-ray/DVD – Deluxe set (available only at Target), which was released on December 8th, and I was so excited to plan a movie night around it.
I got to thinking, what kind of dish could you make to go along with the name “Herb Overkill?” Something savory, filling and sure to be a crowd-pleaser. Then it came to me: Chicken Wings! Luckily my Target sell groceries too, so I was able to pick up all of our movie night necessities, including the ingredients for our main dish.

I’m a little jealous of my friends who get these regular “date nights” with their spouses. I know we made the choice to have a whole litter of small children, but I still long for that time alone with my husband to connect, eat fancy food, and maybe watch a movie. Those things tend to be a little on the pricier side, and then there’s the whole issue of paying someone to watch the kids as well. For some strange reason, my husband and my boys just love camping. I don’t really get it, but I go along with it anyway. I don’t mind being outdoors too much. We try to go on a few trips a year since it’s a pretty frugal way to vacation. We throw our camping totes, sleeping bags, and tent in the van, fill up a cooler and go. I try to keep the meals simple because I don’t want to spend a lot of my time cooking and cleaning up. One of my all-time favorite meals to make is my One-Pot Spaghetti.
